I love cornbread and corn muffins. These pancakes taste similar to both. Make these if you're a fan of corn muffins. You will not regret it. Adapted from Cooks Country

Pour 1 1/4 cups of buttermilk in a large bowl

To the buttermilk add the cornmeal

Add the butter to the cornmeal buttermilk mixture.

Whisk it in well too

Take the cornmeal mixture and put it into a microwave and heat for 90 sec.

After the 90 seconds stir it well

cover and let it sit for 5 minutes

While the cornmeal is resting. Put the flour in a bowl

add the sugar

add the baking powder

Add the baking soda

lastly the salt.

Combine this all well. Set aside

Now take your 2 eggs and add them to another bowl

To the eggs add the remainder 2/4 cups of buttermilk

whisk this well

add the egg/buttermilk mixture to the cornmeal mixture

Whisk it into the cornmeal mixture

Done. If you see lumpy pieces of cornmeal just scoop it out. No biggy.

Lets add the cornmeal egg mixture into the flour mixture.

Stir this well and let this sit for 10 minutes.

Take a non-stick pan and put it over medium heat. Put a small amount of butter in the hot pan

Scoop 1/4 cups worth of the batter and pour it into the pan

look at how golden and delish this looks

Ready to serve. This goes well with butter and syrup.
